An exceptional salt for an exceptional cheese

We have chosen to use only salt from the Swiss Alps, specifically from the Bex Salt Mines.
Formed from ancient salt layers thousands of years old, this salt is among the purest in Europe. More costly but infinitely more noble, it reflects our commitment to local, ethical and sustainable sourcing.
Used in all our care recipes, this Alpine salt plays a role far beyond simple preservation. It contributes to the formation of the rind, the development of aromas and the final texture.
Choosing Bex salt means choosing to preserve excellence, to maintain the authentic taste of the Alps, to highlight Swiss natural heritage and to make no compromise on quality at any stage.
